Easy and Marvelous Marinated London Broil Steak on The Grill

Ahhh, spring has sprung and I'm feeling laid back and, well, just plain lazy!  Time to sit outside and enjoy the wind chime swaying in the breeze, the birds chirping and catching the whiff of a marvelous steak on the grill.

Not only do I love steak, I especially like that a good grilled steak is so uncomplicated and just plain delicious.  The marinade for this London broil is absolutely marvelous and great for flank or sirloin steak too...

Easy and Delectable Butternut Squash Soup with Roasted Kale and Sweet Potatoes

When you need to throw something together for an easy lunch or dinner, you're gonna love this amazingly flavorful butternut squash soup with roasted sweet potato cubes and kale chips...it's sooo good and satisfying!

My Sister's Marvelous Go-To Crunchy Tossed Salad with Fresh Veggies

My sister introduced me to her marvelous crunchy salad when I recently visited her.  The genius of this flavorful salad is that she marinates the vegetables before adding to the lettuce, and all you have to do is toss right before serving!

This is the go-to salad for most entrees and her husband's absolute favorite!  I know you and yours will love this toothsome salad as much as we do!  It also makes a wonderful light meal with cooked shredded or sliced meat, shrimp or salmon.

BLT Salad Whole-Grain Tandoori Naan Pizza

There are two things I would normally avoid like the plague...doughnuts* and pizza.  But now, with this BLT Salad Naan Pizza, I can indulge without guilt

Satisfying without being heavy, this pizza is so easy, it can be enjoyed when you need something in a hurry.  It's delicious warm pizza style or cold folded into a wrap.  I love either with sliced grape tomatoes or sun-dried tomatoes.  The spicy piquancy of the blue cheese and the slight tanginess of the creamy goat cheese offer an intriquing combination of flavors.

Smoky-Sweet Molasses-Marinated Grilled Steak

I'm so excited to share this incredibly delicious steak, which is currently my favorite way to enjoy flank or sirloin steak.  (I generally buy what looks the best to me at the time of purchase.)

I used to enjoy my steak medium-rare; and, though I agree that's the most appetizing in photos, I now eat my steak medium-well, as you see photoed here.

I know you and yours will love this very flavorful steak as much as I do...plus, it's so easy!  This is a great one for Labor Day, folks!

Delightfully Seasoned Beef Taco Pie with Pepper Jack Cheese ~ My Happy Pie!

Packed with flavor, this family-pleasing dish is easy to make; but definitely not mundane!  I love the delightful and surprising bite of cinnamon along with the beef.  The pepper jack cheese and the chili powder offer just the right amount of heat, and the cheese adds just enough salt...no need for additional salt and pepper.

Though the pepper jack cheese does not offer over-powering heat to this delicious taco pie, you can substitute Cheddar cheese for those with more sensitive palates.  For a little additional flavor, I chose to use canned diced tomatoes with basil, garlic and oregano.  This scrumptious casserole makes a wonderful weeknight meal or take-along dish, and it freezes well.

A fun and comforting pie, it makes me so happy...I just can't seem to get enough of it!

Marvelous Bolognese Sauce Made Simply In The Slow Cooker

With this cold and wet winter weather, you want a simple, yet hearty, comforting dish that will satisfy the whole family; or maybe you need a laid-back entree for a group or party.  Relax...you'll have plenty of time to cozy up to that crackling fireplace or enjoy your party with this Marvelous Bolognese Sauce Made Simply In the Slow Cooker!

I prefer the crunch of coarsely chopped carrots and celery in this gratifying sauce; however, you can mince them along with mincing the onion and garlic, if you like.  Also, I chose to make it with ground beef chuck and ground Italian-seasoned turkey sausage, rather than bulk Italian sausage.

Not only will you love this flavorful sauce over your favorite pasta, you'll find it's terrific over meatballs too!  For those times when family members are on different schedules, or for a buffet party, you can just keep it warm in the slow cooker!

Craving Crunchy Orange Chicken ~ Crowned with Crispy Green Onions and Toasted Almonds ~Asian Inspired

Do you ever have a craving for orange chicken...like Panda Express'?  I love their orange chicken; so when I originally found this recipe on the internet, I was excited to make it.  Though I wouldn't say this is exactly like Panda Express' orange chicken (as the original recipe suggested), this Asian-inspired chicken is sure to satisfy your craving with its crunchy tempura-like batter, true orange flavor and crispy green onion and toasted almond toppings.  With this recipe, you can enjoy orange chicken takeout at home by taking it right out of your own oven with easily accessible ingredients.

Panda Express' orange chicken does have a little more heat than I like, so I adjusted the amount of red pepper flakes from the original recipe.  Of course, if you prefer more heat, you can add more red pepper flakes, or you can just omit the red pepper flakes altogether.  Like I generally do, I made quite a few changes to the original recipes...including increasing the orange flavor with the addition of navel orange pieces.  I preferred the more obvious flavor of navel orange pieces over mandarin orange segments.

As I typically do, I've tried to eliminate any guess work and be as thorough as possible with the directions.  I often say that I write a recipe as though my daughter were standing beside me.

Pepper Jack Cheese Hamburger Skillet Pie with Triple Cheddar Cheese and Jalapeno Cornbread Topping

Not your typical hamburger pie, this one is crowned with a cozy cornbread topping that has a moist interior with a crunchy top.  The triple Cheddar cheese and jalapeno cornbread topping perfectly complements the slightly peppery ground beef base.

Though this dish isn't extremely peppery; if you have any family members who are a little pepper-skittish, of course you can omit the jalapenos from the cornbread topping and substitute the pepper jack cheese with Cheddar or Colby Jack cheese.

You and yours will enjoy this hamburger skillet pie as a satisfying and comforting weeknight meal.  I've also provided directions for using the topping recipe for an 8" or 10" skillet of just cornbread.

Turkey Polska Kielbasa Sauté with Haricot Verts, i.e. Turkey Polish Sausage with Extra Fine Green Beans!

You're starving and you want something quick, but homemade.  I was recently looking for something like this at the grocery store and spotted turkey Polska kielbasa, i.e. turkey Polish sausage.  I took it home and, with other ingredients on hand, I developed a delectable one-dish sauté.  I was so excited with the ease and fabulous taste of this dish, I immediately wanted to share it!

This recipe offers the option of jarred or fresh mushrooms, frozen or fresh roasted potatoes and frozen or fresh haricot verts (extra fine green beans).  The jarred and frozen items just provide you the opportunity to throw the meal together a little quicker.  Whether you choose to use these items prepackaged or fresh, this dish will still be delicious.

With an array of colorful vegetables, you have a complete, healthy one-dish meal which is easily and quickly made on the stove top.
