Blistered Haricot Verts (Extra Fine Green Beans) with Golden Mushrooms

Green beans are my favorite green vegetable!  Plus, they just seem to go with most entrees.  We enjoy these scrumptious blistered haricot verts frequently, with or without the mushrooms.  However, the golden mushrooms are so fabulous, they do add a special dimension to the recipe!

Versatile and easy, you'll never have to think twice about what your side dish will be with these fantastic blistered green beans and golden mushrooms in your repertoire!

Serves approx. 2-3

Ingredients
  • Approx. 2-3 TB extra virgin olive oil, divided*
  • Approx. 1 TB salted butter
  • Approx. 4 oz. fresh, cleaned and sliced button mushrooms (or 6 oz. canned, drained), optional
  • 8 oz. Whole, fresh or frozen, haricot verts (extra fine green beans), cleaned*
  • Salt and freshly ground black pepper, to taste
  • 1 tsp. minced fresh (or jarred) garlic, optional

Directions
  1. Add 2 TB of the oil* and 1 TB butter to a medium sauté pan and heat over (or just below) medium heat until hot.
  2. Add the mushrooms and heat, turning frequently, until golden brown.  Remove from the pan and set aside.
  3. Add the haricot verts (or green beans) to the pan with about 1 TB* more of the oil, if needed.  Heat until slightly blistered, turning frequently.*  Add salt and freshly ground black pepper, to taste. 
  4. Add the mushrooms back to the pan and sprinkle with a little more salt, to taste.
  5. Add the garlic and heat all the ingredients through.
  6. Serve immediately (or keep in a warm oven on low heat until ready to enjoy).
Tips*
  1. You can substitute string or snap green beans, if you like.
  2. If some of the beans blister earlier than the others, remove from the pan and set aside...add back to the pan at the end, along with the garlic.
I make this easy and delicious dish all the time; and I know you will enjoy it as often as we do!

  1. Amazing! This is very very similar to the way we cook them here during the summer, when they're fresh and tender (minus the mushrooms)! Adding mushrooms must elevate this to a whole new level!

  2. Thank you so much! That's interesting that your enjoy them in a similar way. The beans are fantastic by themselves; however, you are right, the mushrooms make them even more delicious! Also, the mushrooms are great by themselves or added to your scrambled eggs or omelette. Enjoy!
