Famous Two-Ingredient, Two-Step Barbecued Pulled Chicken In The Slow Cooker

If you need something uncomplicated and delicious for dinner or a cookout, you'll love this famous... okay, my famous...lip-smacking, super-easy barbecued pulled chicken!  It's made with only two ingredients in the slow cooker in only three hours, using incredibly simple methods of shredding and cooking the chicken.

Enjoy this laid-back, crowd-pleasing recipe for Labor Day, tailgating and effortless weeknight meals!

Serves approx. 4-5

Ingredients
  • 2 large chicken breasts from a quality, large, pre-cooked, store-bought rotisserie chicken...about 4 1/2 cups after shredded*
  • 1 1/2 cups of your favorite bottled barbecue sauce (not too thick for this recipe)*

*Tips
  1. I like Costco's rotisserie chicken for best flavor, size and value.
  2. The combination of sauces that I used for this post was perfect: 1 c. of Archer Farms (distributed by Target) Sweet Pineapple Hawaiian-Style Barbecue Sauce and 1/2 c. of Sweet Baby Ray''s Honey Barbecue Sauce (which I used to tame the heat of the Archer Farms' sauce).  A couple of barbecue sauces that I like to use by themselves for this recipe are Williamson Bros. Original Sauce or Jack Daniel's Original Sauce.

Directions
  1. Using the flat beater on a KitchenAid mixer, shred the chicken breasts on low just until pulled apart. (This is a super-easy way of shredding chicken that I learned from my daughter.)  Or, just shred using two forks.
  2. Place in a slow cooker (use a small cooker for 2 large chicken breasts) and sir in the barbecue sauce.  Cover and cook on low for 3 hours, stirring after 1 1/2 hours.  Turn to warm and serve from the slow cooker.  Store leftovers in the refrigerator up to 4 or 5 days.  Freezes well up to 6 months.

Savor this flavorful barbecued pulled chicken on a premium bun as a traditional or an open-faced sandwich (with slaw if you like) or on a mixed salad for a lighter meal.
